Avocado Toast with Poached Egg: A Delicious and Nutritious Breakfast

Instructions
- Prepare the Avocado Spread:
- Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
- Mash the avocado with a fork until smooth. Stir in lemon juice, and season with salt and pepper to taste.
- Toast the Bread:
- Toast the bread slices to your desired level of crispiness using a toaster or under the broiler.
- Poach the Eggs:
- Fill a medium saucepan with water and add white vinegar if using. Bring the water to a gentle simmer over medium heat.
- Crack one egg into a small bowl or cup. Gently slide the egg into the simmering water. Repeat with the remaining eggs.
- Cook the eggs for 3-4 minutes, until the whites are set but the yolks remain runny. Use a slotted spoon to remove the eggs and place them on a paper towel to drain.
- Assemble the Toast:
- Spread the mashed avocado evenly over the toasted bread slices.
- Top each slice with a poached egg.
- Garnish and Serve:
- Sprinkle with red pepper flakes or a dash of hot sauce if desired.
- Garnish with fresh herbs and additional salt and pepper if needed.
- Serve immediately for the best texture and flavor.
