Avocado Toast with Poached Egg: A Delicious and Nutritious Breakfast

Instructions

  1. Prepare the Avocado Spread:
    • Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
    • Mash the avocado with a fork until smooth. Stir in lemon juice, and season with salt and pepper to taste.
  2. Toast the Bread:
    • Toast the bread slices to your desired level of crispiness using a toaster or under the broiler.
  3. Poach the Eggs:
    • Fill a medium saucepan with water and add white vinegar if using. Bring the water to a gentle simmer over medium heat.
    • Crack one egg into a small bowl or cup. Gently slide the egg into the simmering water. Repeat with the remaining eggs.
    • Cook the eggs for 3-4 minutes, until the whites are set but the yolks remain runny. Use a slotted spoon to remove the eggs and place them on a paper towel to drain.
  4. Assemble the Toast:
    • Spread the mashed avocado evenly over the toasted bread slices.
    • Top each slice with a poached egg.
  5. Garnish and Serve:
    • Sprinkle with red pepper flakes or a dash of hot sauce if desired.
    • Garnish with fresh herbs and additional salt and pepper if needed.
    • Serve immediately for the best texture and flavor.
