Vegetable Stir-Fry with Tofu: A Flavorful and Nutritious Meal

Instructions

  1. Prepare the Tofu:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the cubed tofu and cook until golden brown and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  2. Stir-Fry the Vegetables:
    • In the same skillet, add the remaining tablespoon of vegetable oil.
    • Add the garlic and ginger and sauté for about 1 minute until fragrant.
    • Add the broccoli, bell peppers, snap peas, and carrot to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
  3. Combine Ingredients:
    • Return the tofu to the skillet with the vegetables.
    • In a small bowl, mix the soy sauce, hoisin sauce, and rice vinegar. Pour the sauce over the tofu and vegetables.
    • Stir well to coat everything evenly. Add the cornstarch mixture and cook for an additional 1-2 minutes, until the sauce thickens.
  4. Serve:
    • Remove from heat and garnish with sliced green onions and sesame seeds if desired.
    • Serve hot over cooked rice or noodles.
