Vegetable Stir-Fry with Tofu: A Flavorful and Nutritious Meal

Instructions
- Prepare the Tofu:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the cubed tofu and cook until golden brown and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- Stir-Fry the Vegetables:
- In the same skillet, add the remaining tablespoon of vegetable oil.
- Add the garlic and ginger and sauté for about 1 minute until fragrant.
- Add the broccoli, bell peppers, snap peas, and carrot to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
- Combine Ingredients:
- Return the tofu to the skillet with the vegetables.
- In a small bowl, mix the soy sauce, hoisin sauce, and rice vinegar. Pour the sauce over the tofu and vegetables.
- Stir well to coat everything evenly. Add the cornstarch mixture and cook for an additional 1-2 minutes, until the sauce thickens.
- Serve:
- Remove from heat and garnish with sliced green onions and sesame seeds if desired.
- Serve hot over cooked rice or noodles.
